Whipped cream with herbs

  • 12 gr of caviar
  • 35 gr of julienne potato
  • 5 gr of melted butter
  • 15 gr of whipped cream
  • ½ a bunch of chives
  • ½ a bunch of coriander
  • Salt and pepper

  1. With the darphin apple, and the grated julienne potato (after it has been peeled): these absolutely must not be washed, in order to retain the starch; mix the melted butter, the salt and pepper with the potato, put it all on a plate and you should get a thickness of it all of about 2 cm; then cook it all at 220°C for 26 minutes.
  2. Raise the cream with the thresher, add the herbs, slice the darphin apple when it is crispy, apply a nice scoop of caviar and enjoy it with cream.
